Cheesy Chicken & Salsa Skillet
This simple one-dish meal combines tender chicken pieces with penne pasta in a thick, chunky salsa sauce. Corn and green pepper strips add colour and texture, while a generous sprinkle of Mexican cheese blend melts over the top for a creamy finish. It's a complete, family-friendly dinner that comes together quickly in a single skillet.
Ingredients
- 2 cups penne pasta, multi grain, uncooked
- 1 lb boneless skinless chicken breast, cut into bite-size pieces
- 1 1/4 cups Taco Bell Home Originals thick 'n chunky salsa
- 1 cup frozen corn, thawed
- 1 large green pepper, cut into short thin strips
- 1 cup kraft shredded 2% mexican cheese blend
Method
- Prepare the pasta according to the instructions on its packaging.
- While the pasta cooks, place a large nonstick skillet coated with cooking spray over heat. Cook the chicken pieces for 2 minutes, stirring frequently. Pour in the salsa, then add the corn and pepper strips. Allow the mixture to reach a boil, then reduce the heat and let it simmer for 10 minutes, stirring now and then, until the chicken is fully cooked.
- Once the pasta is ready, drain it well. Stir the drained pasta into the chicken and salsa mixture in the skillet. Top the combined ingredients with the shredded cheese. Take the skillet off the heat, cover it, and leave it to stand for 1 minute so the cheese can melt.
