Cheesy Chicken Penne Bake
This baked pasta dish combines shredded chicken breast with a creamy Alfredo and chicken broth sauce, tossed with penne rigate. Topped with cheddar cheese and baked until golden, it is a hearty and satisfying meal. It serves four people and takes about 60 minutes to prepare and cook from start to finish.
Ingredients
- 3 chicken breasts (fully cooked, seasoned to your liking and shredded)
- 16 ounces alfredo sauce (I used “Clasico” brand..my mom would be shocked I didn’t make my own so shuuushhh)
- 1 cup shredded cheddar cheese
- 1/2 yellow onion
- 1 tablespoon ground black pepper
- 1/3 cup chicken broth
- 1 lb penne rigate
Method
- Preheat the oven to 375°F. Cook the chopped onion in a small amount of olive oil until it becomes translucent, taking care not to let it burn.
- Cook the penne rigate pasta in boiling water.
- In a separate pan, mix the Alfredo sauce with the chicken broth and allow it to simmer gently while the pasta cooks.
- When the pasta is al dente, drain it and return it to its cooking pot. Add the shredded chicken and the simmered Alfredo sauce mixture to the pot.
- Stir everything together thoroughly, ensuring the pasta is evenly coated with the sauce.
- Grease a glass baking dish with butter. Transfer the pasta mixture into the dish and sprinkle the shredded cheddar cheese evenly over the top.
- Cover the dish with foil and bake for 15 minutes. Then remove the foil and bake for a further 10 minutes.
- Serve the baked pasta hot.
