Ingredients

  • 2 cups breadcrumbs
  • 3 tablespoons olive oil
  • 2 tablespoons dried parsley
  • 1 large egg
  • 2 tablespoons water
  • 2 teaspoons cornstarch
  • 2 tablespoons all-purpose flour
  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1 tablespoon milk
  • 1/4 cup white onion, finely diced
  • 1/4 cup parmesan cheese, finely grated
  • 1 large egg
  • 1 tablespoon garlic powder
  • 1 teaspoon italian seasoning
  • 1/2 lemon, zested
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 ounces mozzarella cheese, cubed
  • 1/2 cup pizza sauce
  • 2 ounces mozzarella cheese, shredded
  • parsley

Method

  1. Begin by preparing the breadcrumb coating. Toast the 2 cups of breadcrumbs with olive oil and dried parsley in a large skillet until golden, then transfer to a shallow dish.
  2. Make the egg coating by whisking together the egg, water, cornstarch and flour in a separate shallow bowl until smooth.
  3. Preheat your oven to 350 degrees F and line a rimmed baking sheet with parchment paper.
  4. In a medium bowl, combine the ground chicken, breadcrumbs, milk, onion, parmesan cheese, egg, garlic powder, Italian seasoning, lemon zest, salt and pepper. Mix thoroughly.
  5. Separate the chicken mixture into 8 equal portions. Flatten each into a disk, place a mozzarella cube in the centre, and wrap the chicken around it. Shape each one into a cone.
  6. Coat each meatball first in the egg mixture, then roll it in the toasted breadcrumbs until fully covered.
  7. Place the coated meatballs on the prepared baking sheet and bake for 18-22 minutes, or until the chicken is cooked through.
  8. Take the meatballs from the oven and drizzle pizza sauce over each one, then sprinkle with the shredded mozzarella.
  9. Switch the oven to broil and return the baking sheet to melt the cheese on top for 3-5 minutes.
  10. Finally, remove from the oven and garnish with parsley before serving.
