Ingredients

  • 3 cups egg noodles, uncooked
  • 1 lb boneless skinless chicken breast, cut into bite sized pieces
  • 2 cups frozen chopped broccoli
  • 1/2 cup reduced-sodium fat-free chicken broth
  • 4 ounces cream cheese, cubed
  • 1/4 cup mayonnaise
  • 1 cup sharp cheddar cheese, shredded

Method

  1. Start by boiling a large pot of water.
  2. Place the uncooked egg noodles and chicken pieces into the boiling water.
  3. Allow them to cook for 8 minutes, until the chicken is fully cooked and the noodles are tender.
  4. After 6 minutes of cooking, add the frozen broccoli to the pot.
  5. Drain the contents of the pot and return them to it.
  6. Pour in the chicken broth, then add the cubed cream cheese and mayonnaise.
