Cheesy Chicken Noodle Skillet
This one-dish meal combines chicken pieces and egg noodles cooked together, with broccoli added towards the end. A creamy sauce is made by melting cream cheese and mayonnaise into chicken broth, then finished with sharp cheddar. It's a fast and satisfying dinner option that is ready in about 25 minutes. Ingredients
- 3 cups egg noodles, uncooked
- 1 lb boneless skinless chicken breast, cut into bite sized pieces
- 2 cups frozen chopped broccoli
- 1/2 cup reduced-sodium fat-free chicken broth
- 4 ounces cream cheese, cubed
- 1/4 cup mayonnaise
- 1 cup sharp cheddar cheese, shredded
- fresh parsley (optional)
Method
- Start by boiling a large pot of water.
- Place the uncooked egg noodles and chicken pieces into the boiling water.
- Allow them to cook for 8 minutes, until the chicken is fully cooked and the noodles are tender.
- After 6 minutes of cooking, add the frozen broccoli to the pot.
- Drain the contents of the pot and return them to it.
- Pour in the chicken broth, then add the cubed cream cheese and mayonnaise.
- Warm the mixture just until it begins to simmer.
- Let it simmer for 2 to 3 minutes, stirring the whole time, until the cream cheese has melted and the sauce is smooth.
- Mix in the shredded cheddar cheese and stir for 1 minute until it melts into the sauce.
- If using, scatter some fresh parsley over the top before serving.
