Cheesy Chicken Mince Fritters with Broccoli

These baked fritters are a clever way to enjoy a tasty meal. Made with chicken mince, they contain a generous amount of broccoli and plenty of cheese for a satisfying result. The method involves mixing, shaping and baking until golden. A quick herbed yoghurt sauce makes the perfect accompaniment. This recipe yields about 15 fritters, ideal for sharing as a starter or main dish.

Cheesy Chicken Mince Fritters with Broccoli

Ingredients

  • 500 g / 1 lb chicken mince (ground chicken) (, or turkey or pork (Note 1))
  • 1 garlic clove, (minced)
  • 1 egg
  • 3/4 cup panko breadcrumbs
  • 2 packed cups broccoli (, soft cooked & finely chopped (1 head)(Note 2))
  • 3/4 cup finely chopped shallots
  • 1 1/2 - 2 cups shredded mozzarella ((or other cheese of choice))
  • 3/4 tsp salt ((reduce to 1/2 tsp if using a flavoured cheese)(Note 3))
  • Black pepper
  • Oil spray
  • 2/3 cup plain yoghurt
  • 1/8 tsp EACH dried dill, parsley and chives
  • 1/4 tsp onion powder
  • 1/2 garlic clove, minced
  • 1 - 2 tsp extra virgin olive oil
  • Squeeze of lemon juice, (optional)

Method

  1. Heat the oven to 200C/390F. Prepare a baking tray by lining it with baking paper or coating it with oil spray.
  2. Combine all the ingredients for the Fritters in a large mixing bowl.
  3. Scoop roughly ¼ cup of the mixture and form it into a patty shape approximately 6 cm / 2.25" wide and 1cm / 2/5" thick, as they will shrink slightly.
  4. Arrange the shaped fritters on the prepared tray. Liberally spray the tops with oil.
  5. Bake for 15 minutes, then turn them over, spray once more with oil and continue baking for another 8 - 10 minutes until the tops are golden. Serve straight away with the Sauce.
  6. For the Sauce: Simply stir all the listed ingredients together. Season with salt and pepper as preferred. Allow it to rest for at least 20 minutes before using.
