Cheesy Chicken Hash Brown Casserole

Ingredients
- 2 (10 1/2 ounce) cans cream of chicken soup
- 1/2 cup sour cream
- 1 cup chicken broth
- 3/4 teaspoon pepper
- 1 1/2 cups shredded cheese, Mexican blend, divided
- 2 (20 ounce) packages refrigerated shredded hash browns
- 1 lb cooked shredded chicken
- 1 cup crushed Ritz cracker
- 2 tablespoons melted butter
Method
- Set your oven to 400°F. Combine the cream of chicken soup, sour cream, chicken broth and pepper in a large bowl, mixing thoroughly.
- Add one cup of the Mexican blend cheese, the hash browns and the shredded chicken to the bowl, stirring to coat everything evenly.
- Transfer this mixture into a 9x13 inch baking dish that has been lightly greased, spreading it out evenly.
- Sprinkle the remaining half cup of cheese over the top of the mixture in the dish.
- In a separate small bowl, toss the crushed Ritz crackers with the melted butter until the crumbs are coated.
- Scatter the buttered cracker crumbs evenly over the cheese layer.
