Cheesy Chicken Florentine Casserole
This indulgent Italian casserole features chicken breasts baked in a rich, creamy sauce made with Parmesan, heavy cream, and condensed broccoli soup, flavoured with fresh oregano, basil, and parsley. The dish is assembled with a base of spinach, topped with the chicken and sauce, and finished with a mozzarella crust. It bakes until golden and bubbly for a complete dinner.
Ingredients
- 4 (4 ounce) skinless, boneless chicken breast halves
- 0.5 cup unsalted butter
- 2 tablespoons unsalted butter
- 2 cups shredded Parmesan cheese
- 1.5 pints heavy cream
- 1 (10.5 ounce) can condensed cream of broccoli soup
- 3 tablespoons chopped fresh oregano, or to taste
- 2 tablespoons chopped fresh basil, or to taste
- 2 tablespoons chopped fresh parsley, or to taste
- 1 teaspoon garlic powder, or to taste
- salt and ground black pepper to taste
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 2 cups shredded mozzarella cheese
Method
- Preheat your oven to 350 degrees F (175 degrees C). Position the chicken breasts on a baking tray lined with parchment.
- Bake the chicken in the preheated oven for 15 to 20 minutes, until it is just light pink in the centre and not fully cooked.
- As the chicken bakes, melt 1/2 cup plus 2 tablespoons of butter in a skillet. Mix in the Parmesan cheese until it melts. Pour in the heavy cream and condensed soup, then add the oregano, basil, parsley, garlic powder, salt, and pepper. Lower the heat and simmer the sauce for about 5 minutes until it thickens.
- Spread the drained spinach across the base of a 9-inch square baking dish. Spoon roughly 1 1/2 cups of the sauce over the spinach. Place the par-baked chicken breasts on top, cover them with the rest of the sauce, and scatter the mozzarella cheese over everything.
- Bake the assembled casserole in the oven for 20 to 25 minutes, until the top is lightly browned and the sauce is bubbly.
