Cheesy Chicken Enchiladas

These satisfying enchiladas feature a creamy filling made from diced chicken, nacho cheese soup, cream of chicken soup, tomatoes and cumin. The mixture is rolled inside flour tortillas, topped with enchilada sauce and Monterey Jack cheese, then baked until hot and bubbling. This Mexican-inspired dish is perfect for a family meal and can be prepared in under an hour.

Cheesy Chicken Enchiladas

Ingredients

  • 10 ounces of campbell's Fiesta nacho cheese soup
  • 10 ounces cream of chicken soup
  • 10 ounces Rotel Tomatoes, drained
  • 1 tablespoon cumin
  • 1 1/4 lbs chicken, cooked and diced
  • 10 ounces enchilada sauce
  • 2 cups monterey jack cheese
  • 8 flour tortillas

Method

  1. Prepare the chicken by cooking and dicing it, then set it aside.
  2. Combine the first four listed ingredients in a bowl.
  3. For each tortilla, place 1/3 cup of the diced chicken and 1/3 cup of the soup and tomato mixture onto it. Roll the tortilla up and position it in a greased 9 x 13 inch baking dish. Repeat this process for all eight tortillas.
  4. Pour the remaining 1/2 cup of enchilada sauce over the assembled tortillas, then sprinkle the Monterey Jack cheese evenly on top.
  5. Cover the dish and bake in an oven preheated to 370°F for 35-40 minutes.
