Cheesy Chicken Enchilada Casserole
This family favourite Mexican casserole recipe came from a bridal shower years ago. It is a simple one dish meal where boiled chicken breasts stay wonderfully moist. Layers of tortilla chips, chicken, a creamy sauce made with onion, green chillies, soup and milk, and Velveeta cheese are baked together. It is garnished with salsa and sour cream for a tasty finish.
Ingredients
- 4 bone-in chicken breasts
- 1 small onion, chopped
- 4 ounces chopped green chilies
- 1 (10 1/2 ounce) can cream of chicken soup
- 1 (10 1/2 ounce) soup can milk
- Velveeta cheese
- 1 (11 1/2 ounce) bag tortilla chips
- salsa or picante sauce
Method
- Boil the chicken breasts, then allow them to cool before deboning and chopping them coarsely.
- Crush a quantity of tortilla chips sufficient to cover the base of a 9x13 inch baking pan.
- Arrange the chopped chicken in a layer over the crushed chips.
- Combine the chopped onion, green chillies, cream of chicken soup and milk in a bowl.
- Pour this mixture evenly over the layer of chicken.
- Slice the Velveeta cheese and place the pieces across the entire surface.
- Crush more tortilla chips to create a layer covering the cheese.
- Bake the dish at 350 degrees for 25 minutes.
- Finish by garnishing the baked casserole with salsa and sour cream.
