Cheesy Chicken Curry Casserole

Ingredients

  • 1 (16 ounce) bag egg noodles, cooked and drained
  • 2 (10 ounce) cans cream of chicken soup
  • 4 cups shredded cheddar cheese, divided
  • 3 (10 ounce) cans cooked chicken breasts, drained
  • 1/2 cup milk
  • 1/2 cup white onion
  • 1 1/2 tablespoons curry powder
  • 1 (4 ounce) can sliced ripe olives
  • salt and pepper, enough for the whole dish

Method

  1. Combine the chicken, soup, milk, 3 cups of the shredded cheese, onion, curry powder, salt and pepper in a bowl, mixing thoroughly. You can allow this mixture to stand so the curry flavour develops.
  2. Stir the cooked and drained egg noodles into the chicken and cheese mixture. Transfer the combined contents to a greased 9x13 inch baking dish.
  3. Scatter the sliced black olives over the top, followed by the remaining 1 cup of shredded cheese. Place in an oven preheated to 350°F and bake for 20 minutes, or until the cheese has melted and turned golden. Allow the baked casserole to rest for 10 minutes before serving.
