Cheesy Chicken Casserole
This comforting American dinner casserole combines tender rice, shredded chicken and a generous amount of Cheddar cheese with vegetables like broccoli and mushrooms. Bound with cream of mushroom soup and seasoned with a hint of cayenne, it bakes into a golden, bubbly dish perfect for a family meal. The preparation is straightforward, resulting in a satisfying one-pan bake that serves six.
Ingredients
- 1 cup water
- 1 cup chicken broth
- 1 cup uncooked white rice
- 1.5 cooked boneless chicken breasts, shredded, or more to taste
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 (8 ounce) can water chestnuts, drained and chopped
- 2 cups shredded Cheddar cheese
- 0.75 cup chopped fresh broccoli
- 0.75 cup chopped mushrooms
- 1 pinch cayenne pepper, or to taste

Method
- Combine the water, chicken broth and rice in a saucepan and bring to a boil. Cover, reduce the heat and simmer until the rice is tender and the liquid is absorbed, 20 to 25 minutes.
- As the rice cooks, preheat your oven to 375 degrees F (190 degrees C).
- Put the shredded chicken into a large casserole dish. Mix in the cooked rice, condensed soup, water chestnuts, Cheddar cheese, broccoli, mushrooms, cayenne pepper, salt and black pepper. Stir everything together thoroughly, then smooth the surface.
- Place the dish in the preheated oven and bake until the top is golden brown and the mixture is bubbling, 30 to 45 minutes.
