This recipe creates a comforting dinner dish where chicken breasts are flattened, filled with a rich mixture of cream cheese, Cheddar, Parmesan and sautéed mushrooms, then rolled into bundles. Each parcel is dipped in egg, coated in crushed cheese crackers and baked until perfectly cooked and golden. Cheesy Chicken Bundles

Ingredients

  • 4 skinless, boneless chicken breast halves
  • 1 teaspoon butter
  • 1 (4.5 ounce) can sliced mushrooms, drained
  • 1 egg
  • 0.5 cup cheese-flavored crackers (such as Cheez-It Duoz Sharp Cheddar and Parmesan®), crushed
  • 1 (8 ounce) package cream cheese
  • 1.25 cups shredded Cheddar cheese, divided
  • 6 tablespoons grated Parmesan cheese

Method

  1. Set your oven to 375 degrees F (190 degrees C). Lightly grease a 9x12-inch baking dish.
  2. Put one chicken breast between two sheets of heavy plastic, like resealable freezer bags, on a sturdy surface. Use the smooth side of a meat mallet to pound it firmly to a 1/4 inch thickness. Repeat this process with the remaining chicken breasts.
  3. Melt 1 teaspoon of butter in a small skillet. Cook the drained mushrooms until they start to brown, which should take about 8 minutes. Set them aside. In a shallow bowl, beat the egg. Place the crushed cracker crumbs into a separate shallow bowl.
  4. Combine the cooked mushrooms, cream cheese, 1 cup of the shredded Cheddar cheese, and the grated Parmesan cheese in a bowl. Spread this mixture generously over each flattened chicken breast. Roll the chicken up tightly around the filling. Dip each bundle into the beaten egg, then roll it in the cracker crumbs. Place them in the prepared baking dish. Sprinkle the remaining 1/4 cup of Cheddar cheese over the tops.
  5. Bake in the preheated oven for about 30 minutes. The chicken should be cooked through, the filling melted, and the crumb coating golden brown. To check, an instant-read thermometer inserted into the centre of a roll should register at least 165 degrees F (74 degrees C).
