Cheesy Chicken, Broccoli and Rice Casserole
This satisfying casserole transforms simple ingredients into a complete meal. White rice and fresh broccoli are cooked in a flavourful chicken broth, then combined with a creamy sauce made from sautéed onion, garlic, and mayonnaise. Diced cooked chicken and plenty of cheddar cheese are folded in before baking until golden and bubbly. It's a hearty, homemade alternative to recipes relying on canned soup.
Ingredients
- 1 1/2 cups white rice
- 3 cups water
- 2 chicken bouillon cubes
- 1 head broccoli, chopped
- 1 tablespoon butter
- 1 small onion, diced
- 3 -4 garlic cloves, minced
- 1/4 teaspoon thyme
- 2 cups cooked chicken, diced
- 1/2 cup milk
- 3 tablespoons mayonnaise
- salt and pepper
- 2 cups shredded cheddar cheese
Method
- Bring the water to a boil and dissolve the bouillon cubes in it.
- Stir in the rice and chopped broccoli, cover the pan, and let it cook for 12-15 minutes.
- As the rice cooks, melt the butter in a separate pan. Cook the diced onion until soft and beginning to colour, which should take about 8 minutes.
- Mix in the minced garlic and continue cooking for 2 minutes more.
- Remove the pan from the heat. Stir through the thyme, diced chicken, mayonnaise, and milk until everything is well combined.
- When the rice and broccoli are done, take them off the heat and transfer the mixture to a 9x11 inch glass baking dish.
- Pour in the chicken and sauce mixture along with 1 1/2 cups of the shredded cheddar cheese. Mix everything thoroughly in the dish.
- Season the combined casserole with salt and pepper according to your preference.
- Scatter the rest of the shredded cheese evenly over the top.
- Bake the casserole at 350 degrees for approximately 25 minutes, or until the cheese on top has melted completely.
