Cheesy Chicken Breast
This family-pleasing recipe offers a straightforward way to prepare boneless chicken breasts. The chicken is coated in a flavourful mixture of breadcrumbs, Parmesan, cheddar, and garlic before being baked until golden. Ingredients
- 4 boneless chicken breasts
- 1/3 cup olive oil
- 1 garlic clove, minced
- 1/2 cup breadcrumbs
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 1/8 teaspoon paprika
- 1/4 cup parmesan cheese, finely grated
- 1/3 cup cheddar cheese, finely grated
- 1 tablespoon parsley, chop
Method
- Mix the olive oil and minced garlic together in a bowl and allow it to stand for 15 minutes.
- In a separate bowl, combine the breadcrumbs with the pepper, salt and paprika, stirring thoroughly.
- Stir the finely grated Parmesan cheese, cheddar cheese and chopped parsley into the breadcrumb mixture until well incorporated.
- Coat each chicken breast fully in the garlic oil, then press it into the crumb mixture to cover both sides. Transfer the coated breast to a greased baking dish.
- Continue this process until all the chicken breasts are prepared and placed in the dish.
- Pour any leftover garlic oil evenly over the top of the chicken.
- Bake the chicken in the oven at 400° for 35 minutes.
- Take the dish from the oven and allow the chicken to rest for 5 minutes prior to serving.
