Cheesy Chicken Baguette

This warm and satisfying toasted baguette is packed with flavour. Tender chicken breasts are cooked with golden caramelised onions and browned mushrooms, then layered with shredded cheese and crumbled bacon. The assembled sandwich is baked briefly to melt the cheese before serving. It makes a perfect, hearty lunch or snack for two.

Cheesy Chicken Baguette

Ingredients

  • 3 tablespoons butter
  • 1 medium onion, thinly sliced
  • 1 cup sliced mushrooms, caps only
  • 2 boneless skinless chicken breast halves (pounded thin)
  • 1/4 teaspoon dried thyme leaves, crushed (optional)
  • salt & fresh ground pepper, to taste
  • crushed red pepper flakes, to taste (optional)
  • garlic powder
  • mayonnaise, for serving (optional)
  • mustard, for serving (optional)
  • 1 French baguette, halved lengthwise (about 12-inch long)
  • 3/4 cup jarlsberg cheese or 3/4 cup swiss cheese, shredded
  • 2 slices bacon, crisp-cooked and crumbled

Method

  1. Melt the butter in a 10-inch nonstick skillet, adding crushed red pepper flakes if using. Cook the onions uncovered for 15 minutes, stirring now and then, until they turn golden.
  2. Take the cooked onions out of the pan and set them aside to keep warm.
  3. Sprinkle the warm onions with garlic powder.
  4. Place one tablespoon of butter in the same skillet and cook the chicken for 4 minutes, turning it once, until it is fully cooked.
  5. Melt the rest of the butter in the skillet and cook the mushrooms for about 6 minutes until they are browned and any liquid has been absorbed.
  6. Place the cooked chicken on one half of the baguette. Layer the hot onions, mushrooms, shredded cheese and crumbled bacon on top.
  7. Bake at 375ºF for 5 minutes or until the cheese has melted.
  8. Place the other half of the baguette on top to close the sandwich.
  9. Cut the filled baguette in half to serve.
  10. Finish by sprinkling with thyme and adding salt and fresh ground pepper to your taste.
