Cheesy Chicken and Spinach Casserole
This satisfying casserole brings together tender chicken pieces and chopped spinach in a rich, melted smoked gouda sauce. It's finished with a crisp, buttery breadcrumb topping flavoured with a hint of chili powder. A complete meal prepared in a single dish, ideal for a straightforward weeknight supper. It takes about 65 minutes from start to finish and serves four people.
Ingredients
- 1 1/2 lbs boneless chicken breasts
- 1/2 lb frozen spinach, chopped
- 1/3 lb smoked gouda cheese
- 1/4 cup nonfat milk
- 2 tablespoons butter or 2 tablespoons margarine
- 1/3 cup breadcrumbs (i use italian seasoned)
- 2 tablespoons breadcrumbs
- 1 tablespoon chili powder
- 1 tablespoon vegetable oil
Method
- Defrost the spinach and heat your oven to 375°F.
- Slice the chicken breasts into cubes measuring roughly 1 square inch.
- In a skillet, cook the chicken cubes with 1 tablespoon of vegetable oil until they are nearly done but not fully cooked through.
- Slice the gouda and melt it with 1/4 cup of nonfat milk, using a microwave and stirring at intervals.
- Combine the cooked chicken and thawed spinach in a casserole dish, spreading the spinach evenly among the chicken pieces.
- Once the cheese sauce is ready, pour it directly over the chicken and spinach mixture without stirring.
- Melt the butter and combine it with the breadcrumbs.
- Use your fingers to crumble the buttered breadcrumbs and scatter them evenly across the top of the casserole.
- Evenly sprinkle the remaining 2 tablespoons of breadcrumbs and the chili powder over the dish.
- Cover the dish and bake for 35-40 minutes.
