Cheesy Chicken and Spinach Casserole

Ingredients

  • 1 1/2 lbs boneless chicken breasts
  • 1/2 lb frozen spinach, chopped
  • 1/3 lb smoked gouda cheese
  • 1/4 cup nonfat milk
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1/3 cup breadcrumbs (i use italian seasoned)
  • 2 tablespoons breadcrumbs
  • 1 tablespoon chili powder
  • 1 tablespoon vegetable oil

Method

  1. Defrost the spinach and heat your oven to 375°F.
  2. Slice the chicken breasts into cubes measuring roughly 1 square inch.
  3. In a skillet, cook the chicken cubes with 1 tablespoon of vegetable oil until they are nearly done but not fully cooked through.
  4. Slice the gouda and melt it with 1/4 cup of nonfat milk, using a microwave and stirring at intervals.
  5. Combine the cooked chicken and thawed spinach in a casserole dish, spreading the spinach evenly among the chicken pieces.
  6. Once the cheese sauce is ready, pour it directly over the chicken and spinach mixture without stirring.
  7. Melt the butter and combine it with the breadcrumbs.
  8. Use your fingers to crumble the buttered breadcrumbs and scatter them evenly across the top of the casserole.
  9. Evenly sprinkle the remaining 2 tablespoons of breadcrumbs and the chili powder over the dish.
  10. Cover the dish and bake for 35-40 minutes.
