Cheesy Chicken and Rice Tortillas
This convenient one dish meal is perfect for busy evenings. All the ingredients are combined in a slow cooker in the morning, leaving you with a ready to eat dinner. The mixture of chicken, rice, salsa and cheddar cheese soup creates a rich and hearty filling. It is then simply spooned into warm flour tortillas for a satisfying meal.
Ingredients
- 2 (10 3/4 ounce) cans condensed cheddar cheese soup
- 1 cup water
- 2 cups salsa
- 1 1/4 cups uncooked white rice (not quick cook)
- 2 lbs boneless skinless chicken, cubed
- 10 flour tortillas
Method
- Combine the condensed cheddar cheese soup, water, salsa, uncooked white rice and cubed chicken in a slow cooker.
- Place the lid on the cooker and leave it to cook on the low setting for 7 to 8 hours or until everything is fully cooked.
- Spoon the finished chicken and rice mixture onto the flour tortillas to serve.
