Cheesy Chicken and Potato Soup

- 0.25 cup onion, diced
- 1 tablespoon bacon grease
- 3 cups 1-inch potato chunks
- 2 cups chicken broth
- 1 cup water
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 3 ounces shredded Cheddar cheese
- 1.5 cups shredded cooked chicken
Method
- Place a stockpot over the heat with the bacon grease. Cook the diced onion in the hot grease until softened, which should take about 4 minutes.
- Add the potato chunks to the pot and stir them with the onion. Pour in the chicken broth and water. Bring everything to a boil and cook until the potatoes are tender but still hold their shape, approximately 15 minutes.
- In a small saucepan, melt the butter. Whisk the flour into the butter and cook while stirring for about 1 minute until fully combined. Gradually pour in the milk, continuing to stir, and cook for about 3 minutes more until the mixture thickens. Add the shredded Cheddar cheese and stir for 2 to 3 minutes more until it melts smoothly.
