Cheesy Chicken and Mushroom Bake

Ingredients

  • salt and ground black pepper to taste
  • 4 skinless, boneless chicken breasts
  • 2 tablespoons unsalted butter
  • 1.5 cups sliced fresh mushrooms
  • 0.5 cup diced onion
  • 2 cloves garlic, chopped
  • 1 tablespoon all-purpose flour
  • 0.5 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 0.5 cup shredded mozzarella cheese, or to taste
  • 0.5 cup diced scallions

Method

  1. Set your oven to 375 degrees F (190 degrees C). Prepare a baking dish by lightly greasing it.
  2. Season the chicken breasts with salt and pepper. Melt the butter in a pan. Cook the chicken until browned on all sides, which should take 5 to 7 minutes. Transfer the browned chicken to the greased baking dish.
  3. To the same pan, add the mushrooms, onion, garlic, and flour. Cook these for about 5 minutes until they have softened. Pour in the chicken broth, bring it to a boil, and stir to incorporate any browned bits from the pan base. Once the mixture has thickened to your preference, pour it over the chicken in the dish.
  4. Place the dish in the preheated oven and bake for 30 minutes. Remove it and top with the grated Parmesan, shredded mozzarella, and diced scallions. Return to the oven and bake for about 10 minutes more, until the chicken is fully cooked and the cheese has melted. The chicken's internal temperature should reach at least 165 degrees F (74 degrees C).
