Cheesy Chicken and Chive Sauce
This creamy and flavourful sauce is wonderfully simple to make, ideal for a speedy weeknight meal. It combines tender chicken pieces with a rich, cheesy sauce flavoured with mustard and fresh chives. It pairs beautifully with substantial pasta shapes like fettuccine or large spirals. The entire dish comes together in about 30 minutes, making it a great option when you need a satisfying dinner in a hurry.
Ingredients
- 1 tablespoon olive oil
- 5 skinless, boneless chicken breast halves - cut into strips
- 3 tablespoons butter
- 1 clove garlic, minced
- 2 tablespoons all-purpose flour
- 1.25 cups heavy cream
- 1 cup whole milk
- 2 tablespoons coarse grained prepared mustard
- 0.5 cup grated Parmesan cheese
- 0.5 cup fresh chives, chopped
Method
- Warm the olive oil in a large frying pan. Cook the chicken strips until they are just browned, then remove them from the pan and set aside.
- Add the butter to the same pan and cook the minced garlic for 1 minute.
- Stir the flour into the pan and continue to cook for 1 minute, then take the pan off the heat.
- Combine the heavy cream and whole milk in a jug. Gradually pour this mixture into the flour mixture, whisking continuously until you have a smooth liquid.
- Whisk the coarse grained mustard into the sauce.
- Place the pan back on the heat and stir the sauce constantly until it comes to a boil and thickens.
- Stir the reserved chicken, grated Parmesan cheese and chopped fresh chives into the sauce.
- Continue to cook, stirring, until everything is thoroughly heated.
