Cheesy Chicken and Chips
This popular casserole was a hit at a school potluck. It combines diced chicken with a creamy blend of soup, sour cream, taco sauce, and green chillies. Layered with American cheese and crushed tortilla chips, it bakes into a bubbly, cheesy dish. Best enjoyed fresh, as the chips can soften upon reheating. It serves 6-8 people and takes about 50 minutes to prepare and bake.
Ingredients
- 1 (3 lb) bag chicken breasts, diced & sauteed
- 2 (10 1/2 ounce) cans cream of chicken soup
- 16 ounces sour cream
- 4 tablespoons taco sauce
- 1 (4 ounce) can green chilies, chopped
- 12 slices American cheese
- 5 cups white corn tortilla chips, crushed
Method
- Mix the cream of chicken soup, sour cream, taco sauce, and chopped green chillies together in a bowl.
- Place half of the cooked, diced chicken into a 2 quart baking dish that has not been greased.
- Spoon half of the creamy soup mixture over the chicken layer.
- Arrange half of the American cheese slices on top, followed by half of the crushed white corn tortilla chips.
- Repeat the layering process with the remaining chicken, soup mixture, cheese, and tortilla chips.
- Bake the dish without a cover at 350 degrees for 25-30 minutes, or until the cheese has melted and is bubbling.
