Cheesy Chicken and Broccoli Bake
This satisfying bake combines chicken and broccoli in a rich, creamy sauce flavoured with sherry and Parmesan. The dish is assembled in a skillet before being finished under a hot grill until golden and bubbling. It makes a complete meal on its own, though it is also excellent served over rice or egg noodles. The recipe yields four generous portions.
Ingredients
- 1 1/2 lbs boneless skinless chicken breasts (about four)
- salt and pepper
- 4 tablespoons butter
- 1 onion, chopped fine
- 1/4 cup all-purpose flour
- 1 cup low sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup dry sherry
- 1 1/2 lbs fresh broccoli, florets chopped, stems peeled and sliced thin
- 1 1/2 cups grated parmesan cheese
Method
- Position an oven rack in the upper-middle part of the oven and turn the grill to its highest setting.
- Use paper towels to pat the chicken breasts dry, then season them with salt and pepper. Melt a single tablespoon of butter in a large non-stick frying pan. Cook the chicken until it turns a golden brown colour, which should take roughly three minutes for each side. Move the chicken to a plate.
- Place the rest of the butter and the chopped onion into the now-empty pan. Cook until the onion starts to brown, for about 2 minutes. Mix in the flour and continue cooking for one minute until it turns golden. Pour in the chicken broth, cream and sherry, whisking to combine. Let the sauce simmer until it thickens, for approximately 3 minutes. Put the chicken back into the pan, lower the heat, cover it and simmer until the chicken is fully cooked, around 15 minutes. Transfer the cooked chicken to a baking dish that is safe to use under the grill.
- While the chicken simmers, place the broccoli florets and stems in a large bowl, cover it and microwave on high until the broccoli is bright green and just softened, about 5 minutes. Add the cooked broccoli and one cup of the grated Parmesan to the sauce in the pan, stirring everything together. Season the mixture with salt and pepper, then pour it over the chicken in the baking dish. Scatter the remaining half cup of cheese over the top. Place the dish under the hot grill until the cheese is melted, browned and bubbling, which will take 2 to 4 minutes. Serve immediately.
