Cheesy Chicken and Artichoke Bites
These crowd-pleasing mini bites are an ideal appetiser for entertaining. They feature a savoury filling of chicken, artichoke hearts, spinach, bacon and two cheeses, all encased in a golden pastry cup. The recipe yields a generous batch, making it perfect for parties. Preparation involves assembling the filling, pressing pastry into mini muffin tins, and baking until crisp.
Ingredients
- 2 (8 ounce) cans Pillsbury Refrigerated Crescent Dinner Rolls (8 rolls each)
- 6 slices fully cooked bacon
- 1 (6 ounce) package refrigerated cooked chicken breast strips, cubed
- 1 (9 ounce) box frozen spinach, thawed, squeezed to drain and thoroughly chopped
- 1 (13 3/4 ounce) can quartered artichoke hearts, drained, coarsely chopped
- 2 medium garlic cloves, finely chopped
- 1/2 cup mayonnaise or 1/2 cup salad dressing
- 1/4 cup sour cream
- 1/2 cup shredded asiago cheese (2 oz)
- 1/4 cup grated parmesan cheese
Method
- Set your oven to heat to 375°F.
- Take the dough from both cans and separate it into 8 rectangles, sealing the perforations by pressing them together.
- Slice every rectangle into 6 squares, each measuring 2 inches.
- Place one square into each of 48 ungreased mini muffin cups, pressing it to cover the base and sides.
- Prepare the bacon according to the package instructions, then crumble it.
- Combine the crumbled bacon with all the other ingredients in a large mixing bowl.
- Spoon approximately 1 tablespoon of the chicken mixture into each pastry-lined cup.
- Bake for 12 to 20 minutes, until the pastry edges turn a golden brown colour.
- Take the bites out of the pans straight away and transfer them to a platter for serving while warm.
