Cheesy Chicken and Artichoke Bites

Ingredients

  • 2 (8 ounce) cans Pillsbury Refrigerated Crescent Dinner Rolls (8 rolls each)
  • 6 slices fully cooked bacon
  • 1 (6 ounce) package refrigerated cooked chicken breast strips, cubed
  • 1 (9 ounce) box frozen spinach, thawed, squeezed to drain and thoroughly chopped
  • 1 (13 3/4 ounce) can quartered artichoke hearts, drained, coarsely chopped
  • 2 medium garlic cloves, finely chopped
  • 1/2 cup mayonnaise or 1/2 cup salad dressing
  • 1/4 cup sour cream
  • 1/2 cup shredded asiago cheese (2 oz)
  • 1/4 cup grated parmesan cheese

Method

  1. Set your oven to heat to 375°F.
  2. Take the dough from both cans and separate it into 8 rectangles, sealing the perforations by pressing them together.
  3. Slice every rectangle into 6 squares, each measuring 2 inches.
  4. Place one square into each of 48 ungreased mini muffin cups, pressing it to cover the base and sides.
  5. Prepare the bacon according to the package instructions, then crumble it.
  6. Combine the crumbled bacon with all the other ingredients in a large mixing bowl.
  7. Spoon approximately 1 tablespoon of the chicken mixture into each pastry-lined cup.
  8. Bake for 12 to 20 minutes, until the pastry edges turn a golden brown colour.
  9. Take the bites out of the pans straight away and transfer them to a platter for serving while warm.
