Cheesy Chicken Alfredo Pasta Bake
This American dinner dish combines cubed chicken breast with penne pasta in a rich, garlic-infused sauce made from chicken broth and cream. The mixture is layered in a baking pan with generous amounts of Parmesan and mozzarella cheese. It is finished under the broiler to create a beautifully browned, bubbling cheese topping. The entire process takes just 47 minutes to complete, yielding a substantial bake that serves 12 people.
Ingredients
- 1 tablespoon olive oil
- 3 skinless, boneless chicken breast halves, cubed
- salt and ground black pepper to taste
- 4 garlic cloves, minced
- 2.5 cups chicken broth
- 2.5 cups heavy whipping cream
- 1 (16 ounce) package penne pasta
- 2 cups grated Parmesan cheese
- 2 cups shredded mozzarella cheese
Method
- Warm the olive oil in a skillet. Cook the cubed chicken with salt and pepper, stirring, for about 5 minutes until browned. Stir in the minced garlic and cook for about 2 minutes. Pour in the chicken broth and heavy cream, then add the penne pasta. Bring everything to a boil before reducing the heat to let it simmer for about 15 minutes until the pasta is tender.
- Position an oven rack roughly 6 inches from the broiler element and turn the broiler on. Lightly grease an 11x17-inch baking pan.
- Transfer half of the pasta and chicken mixture into the greased pan. Scatter half of the grated Parmesan and half of the shredded mozzarella cheese evenly over the top. Spoon the rest of the pasta mixture over the cheese layer, then cover it with the remaining Parmesan and mozzarella cheeses.
- Place the pan under the preheated broiler and cook for 10 to 15 minutes, watching until the cheese topping turns a golden brown colour.
