Cheesy Cauliflower
This simple and popular cheesy cauliflower dish is a long-standing favourite, especially at festive gatherings. It takes roughly 18 minutes to prepare from start to finish. The cauliflower is steamed until tender, then coated in a creamy mustard and mayonnaise sauce before being topped with cheddar cheese and melted. It's a versatile recipe that can be made with fresh or frozen cauliflower.
Ingredients
- 1 head cauliflower, trimmed of green stems
- 1 cup mayonnaise
- 1 tablespoon prepared yellow mustard
- 1/2 teaspoon dry mustard
- 1 cup cheddar cheese (shredded)
Method
- Put the trimmed cauliflower head into a microwave-safe dish with 1 tbsp of water. Cover the dish and microwave on high for 10-12 minutes, or until the cauliflower is tender. Once cooked, drain off the water.
- While the cauliflower cooks, combine the mayonnaise and both mustards in a separate bowl. Stir them together until the flavour is to your liking.
- Once the cauliflower is tender and drained, spoon the mayonnaise and mustard mixture over the top, covering most of the surface.
- Scatter the shredded cheddar cheese evenly over the sauced cauliflower. Microwave for about 1 minute more, or just until the cheese has melted.
- Serve immediately and enjoy.
- For a variation using frozen cauliflower, mix the sauce with cooked and drained florets, sprinkle with cheese, and microwave for 1 minute more.
