Cheesy Cauliflower and Smoked Sausage Bake
This hearty bake transforms simple ingredients into a satisfying meal. Thawed cauliflower and browned smoked sausage are folded into a rich, homemade sharp cheddar cheese sauce, then baked until golden. The recipe offers flexibility, suggesting optional additions like onion or peas to create a complete one dish dinner. It yields four generous servings.
Ingredients
- 1 (12 ounce) package frozen cauliflower, thawed
- 1/2 lb smoked sausage (I used Hillshire Farms with the yellow packaging )
- 1 1/2 tablespoons vegetable oil
- 4 tablespoons margarine or 4 tablespoons butter
- 4 tablespoons flour
- 1 1/4 cups milk (may not use all of this )
- 1 1/2 cups sharp cheddar cheese, grated (divided)
- 1 teaspoon ground black pepper (to taste)
- 1/2 teapoon salt (to taste)
Method
- Set your oven to heat to 350F.
- Warm the oil in a skillet and cook the sausage, and onion if using, until browned, then set it aside.
- Melt the butter or margarine in a saucepan, stir in the flour and cook until it looks pale and pasty.
- Gradually pour in the milk, stirring continuously until the mixture begins to thicken.
- Take the pan off the heat and mix in 1 cup of the grated cheese along with the salt and pepper until smooth.
- Gently combine the cauliflower and the cooked sausage with the cheese sauce, ensuring everything is well coated.
- Transfer the mixture to a greased 2 quart rectangular or 8 x 8 inch square baking dish.
- Top with the rest of the cheese, add a sprinkle of paprika if you like, and bake for 30 minutes until golden.
