Cheesy Cauliflower in the Microwave

Ingredients

  • 1 medium head cauliflower, separated into florets
  • butter-flavored cooking spray (such as I Can't Believe It's Not Butter®)
  • 0.25 teaspoon salt, or to taste
  • 0.125 teaspoon ground black pepper
  • 0.25 cup Italian-style bread crumbs
  • 0.25 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced, or more to taste
  • 0.25 teaspoon red pepper flakes

Method

  1. Put the cauliflower florets into a bowl suitable for the microwave and cover them with paper towels. Microwave on high for 5 to 6 minutes. Take the bowl out, drain off any water, and give the cauliflower a stir. Place it back in the microwave and cook for another 5 to 6 minutes until it is soft.
  2. Mist the cooked cauliflower with the butter-flavoured cooking spray and add the salt and pepper. Scatter over the Italian-style bread crumbs, freshly grated Parmesan cheese, and minced garlic, then toss everything together to combine.
  3. Place the bowl back in the microwave and heat for 1 to 2 more minutes until the cheese has melted.
