Cheesy Cauliflower in the Microwave
This American side dish offers a speedy way to prepare cauliflower. The florets are microwaved until tender, then coated with a savoury mix of garlic, Parmesan cheese, and Italian breadcrumbs. A touch of red pepper flakes adds a subtle kick. It's a convenient option for a weeknight dinner, taking just 20 minutes from start to finish to serve four people.
Ingredients
- 1 medium head cauliflower, separated into florets
- butter-flavored cooking spray (such as I Can't Believe It's Not Butter®)
- 0.25 teaspoon salt, or to taste
- 0.125 teaspoon ground black pepper
- 0.25 cup Italian-style bread crumbs
- 0.25 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced, or more to taste
- 0.25 teaspoon red pepper flakes
Method
- Put the cauliflower florets into a bowl suitable for the microwave and cover them with paper towels. Microwave on high for 5 to 6 minutes. Take the bowl out, drain off any water, and give the cauliflower a stir. Place it back in the microwave and cook for another 5 to 6 minutes until it is soft.
- Mist the cooked cauliflower with the butter-flavoured cooking spray and add the salt and pepper. Scatter over the Italian-style bread crumbs, freshly grated Parmesan cheese, and minced garlic, then toss everything together to combine.
- Place the bowl back in the microwave and heat for 1 to 2 more minutes until the cheese has melted.
