Cheesy Canned Potatoes Bake
This comforting potato bake was created from pantry staples when fresh potatoes were unavailable. It transforms simple canned potatoes into a golden, flavourful side dish with smoked ham, sour cream, sharp cheddar and chives. The mixture is baked until hot and bubbly, resulting in a satisfying and quick option for any meal. It serves four to six people and takes only 33 minutes from start to finish.
Ingredients
- 2 (16 ounce) cans of diced potatoes, drained
- 1/4 cup butter
- 1 small onion, chopped
- 4 slices of deli smoked ham, cut into small pieces and fried
- 4 ounces sour cream
- 1/3 cup sharp cheddar cheese
- 1 1/2 tablespoons chives
- salt & pepper
Method
- Preheat your oven to 350°F.
- Melt the butter in a large frying pan, then add the drained potatoes. Cook them, stirring frequently, until they turn a golden brown colour.
- Transfer the golden potatoes to a big bowl. Add the chopped onion, fried ham pieces, sour cream, sharp cheddar cheese, chives, salt and pepper. Gently combine everything until well mixed.
- Spoon the mixture into a greased casserole dish. Bake in the preheated 350°F oven for 23 minutes, or until the contents are hot and bubbly.
