This American side dish is perfect for outdoor cooking. Sliced potatoes are layered with onion, margarine, and a trio of cheeses before being sealed in a foil packet. Cheesy Campfire Potatoes

Ingredients

  • nonstick spray
  • 6 potatoes, sliced
  • 0.25 cup diced onion
  • 2 tablespoons cold margarine
  • 0.25 cup grated Parmesan cheese
  • 0.75 cup shredded mozzarella cheese
  • 0.75 cup shredded Cheddar cheese
  • salt and ground black pepper to taste

Method

  1. Prepare a campfire and let it burn down until you have a good bed of coals. Use a rake to spread the coals into an even layer on one side.
  2. Cut two pieces of heavy-duty aluminium foil, each about 18 inches square. Layer one on top of the other for extra strength and spray the top sheet with nonstick spray.
  3. Arrange the sliced potatoes on the foil, leaving enough space to fold the edges. Top the potatoes with the diced onion and dot with the cold margarine. Sprinkle the Parmesan, mozzarella, and Cheddar cheeses over everything. Add salt and pepper to your liking, then fold and seal the foil packet tightly.
  4. Set the sealed packet directly onto the campfire coals. Cook for about 35 minutes, or until the potatoes inside have softened completely.
