Ingredients
- 2.5 cups butternut squash, peeled and cut into 1/2-inch cubes
- 1 tablespoon olive oil
- 1 tablespoon butter
- 0.33333334326744 cup onion, finely chopped
- 0.33333334326744 apple, peeled and chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 0.33333334326744 cup milk
- 0.33333334326744 cup Italian cheese blend (Parmesan, Asiago, and Romano)

Method
- Put the squash cubes into a saucepan and cover them with water. Bring the water to a boil, then lower the heat to a simmer. Cook until the squash is very tender, which will take 15 to 20 minutes. Drain the squash, and you should have 2 cups of cooked squash.
- Warm the olive oil and butter together in a skillet. Add the finely chopped onion, apple, and minced garlic. Cook while stirring often until the mixture has softened and turned brown, about 15 minutes. Mix in the cooked squash and chicken broth, then bring to a boil. Reduce the heat to a simmer and stir in the milk and Italian cheese blend. Continue stirring until the cheese has melted and the sauce thickens to your liking, 5 to 10 minutes. Finish by seasoning with salt and ground black pepper.
