These Cheesy Buffalo Chicken Skulls are a playful and tasty snack. Shredded rotisserie chicken is mixed with a spicy buffalo sauce and sautéed vegetables, then combined with cheddar and Monterey Jack cheeses. Cheesy Buffalo Chicken Skulls

Ingredients

  • 2 tablespoons butter
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 2 celery ribs, diced
  • 1 large carrot, peeled and diced
  • 2 rotisserie chicken breasts, shredded
  • 3/4 cup buffalo wing sauce
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup shredded monterey jack cheese
  • 1 (13 7/8 ounce) can pizza dough
  • 1/4 cup crumbled blue cheese
  • 1 cup carrot sticks
  • 1 cup celery rib
  • 1/2 cup ranch dressing or 1/2 cup blue cheese dressing, for dipping

Method

  1. Set your oven to heat to 400 degrees.
  2. Melt the butter in a large skillet. Cook the diced onion, minced garlic, diced celery and diced carrot until they become soft, which should take 6 to 8 minutes. Mix in the shredded chicken and buffalo wing sauce until everything is well coated.
  3. Take a medium bowl and stir together the shredded cheddar and Monterey Jack cheeses. Unroll the can of pizza dough so the long side faces you. Slice the dough into six pieces of equal size.
  4. For each piece, press the dough into the cavities of a skull pan, forming a base and coming partway up the sides. Fill each cavity with the chicken mixture, the shredded cheese blend and a sprinkling of blue cheese crumbles. Bring the dough over the filling and press the edges firmly to create a seal.
  5. Bake the filled skulls for 18 minutes. Once baked, carefully take them out of the molds and arrange them on a serving platter. Offer carrot sticks, celery sticks and blue cheese or ranch dressing on the side for dipping.
