Cheesy Buffalo Chicken Casserole
This comforting casserole combines shredded chicken tenders with cooked rice in a creamy, tangy sauce made from cream cheese, ranch dressing, and Buffalo wing sauce. The mixture is layered in a dish, covered with sharp Cheddar, and baked until bubbly. A final topping of crushed corn chips adds a satisfying crunch. Ingredients
- 1 (14 ounce) package chicken tenders
- 1 (8 ounce) package cream cheese, softened
- 0.5 cup ranch dressing
- 0.33333334326744 cup Buffalo wing sauce
- 2 tablespoons water
- 2 cups shredded Colby Jack cheese
- 2 cups cooked rice
- 2 cups shredded sharp Cheddar cheese
- 2 cups crushed corn chips (such as Tostitos®)
Method
- Set your oven to 350 degrees F (175 degrees C) to preheat.
- Boil a large pot of water, then cook the chicken tenders for 10 to 15 minutes until they reach an internal temperature of at least 165 degrees F (75 degrees C). Drain the chicken, let it cool for about 5 minutes, then shred it using two forks.
- Place the softened cream cheese into a blender and process until smooth. Add the ranch dressing, wing sauce, and 2 tablespoons water, blending again until combined. Transfer this sauce to a bowl and mix in the shredded chicken and Colby Jack cheese.
- Evenly distribute the 2 cups of cooked rice across the base of a 9x13-inch baking dish. Pour the prepared Buffalo chicken mixture over the rice, then sprinkle the sharp Cheddar cheese on top. Cover the dish tightly with aluminium foil.
- Bake in your preheated oven for about 45 minutes, until the cheese is fully melted and bubbling. Remove from the oven and scatter the crushed corn chips over the surface.
