These satisfying roll-ups feature a savoury filling of mushrooms, green onions and peppers, combined with cheddar cheese and wrapped in soft tortillas. Cheesy Brunch Roll-Ups

Ingredients

  • 2 cups sliced fresh mushrooms
  • 1/2 cup sliced green onion
  • 1/2 cup chopped green pepper
  • 2 tablespoons butter
  • 8 7-inch flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 4 eggs, beaten
  • 2 cups milk
  • 1 tablespoon flour
  • 1/4 teaspoon garlic powder
  • 3 -4 drops bottled hot pepper sauce
  • 1/2 cup shredded cheddar cheese (, for topping)

  • avocado, sliced (optional)

Method

  1. Cook the sliced mushrooms, green onions and chopped green pepper in butter within a medium saucepan until they become tender, then drain the mixture.
  2. Spoon an equal portion of the cooked vegetable mixture into the middle of each of the eight flour tortillas.
  3. Evenly distribute the 1 1/2 cups of shredded cheddar cheese over the vegetable filling on all the tortillas.
  4. Roll each tortilla up tightly and arrange them with the seam side facing down in a greased 2 quart baking dish.
  5. Whisk together the beaten eggs, milk, flour, garlic powder and hot pepper sauce in a medium bowl.
  6. Pour the combined egg mixture evenly over the arranged tortillas in the baking dish.
  7. You can now cover the dish and refrigerate it for 2 to 24 hours before you proceed to bake.
  8. For immediate baking, place the dish into a preheated 350 F oven.
  9. Bake for 35 to 40 minutes or until the custard is fully set.
  10. Scatter the remaining 1/2 cup of shredded cheddar cheese over the top and allow it to stand for 10 minutes.
  11. If baking after chilling, extend the oven time to 45 to 50 minutes.
  12. After baking, sprinkle the cheese topping over the dish and let it stand for 10 minutes.
  13. Slice the baked roll-ups into squares for serving.
  14. Offer salsa and sliced avocado alongside the dish if desired.
