Cheesy Broccoli Noodle Soup
This creamy soup combines egg noodles and chopped broccoli in a rich, cheesy broth. It is a quick and satisfying dish, ideal for a cold evening. Serve it alongside some garlic bread or crusty rolls for a complete meal. Be aware that leftovers may thicken, so have extra broth on hand to adjust the consistency if needed.
Ingredients
- 2 tablespoons olive oil
- 1/2-3/4 cup chopped onion
- 6 (14 1/2 ounce) cans chicken broth or 6 (14 1/2 ounce) cans vegetable broth
- 8 ounces fine egg noodles
- 2 (10 ounce) packages frozen chopped broccoli
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon fresh ground pepper
- 6 cups milk (I use lowfat milk)
- 16 ounces American cheese
Method
- Warm the olive oil in a large saucepan.
- Cook the chopped onion in the oil until it turns a golden colour.
- Pour in the chicken or vegetable broth and allow the mixture to reach a boil.
- Mix in the salt and the fine egg noodles.
- Let this cook without a lid for about 3 minutes, giving it an occasional stir.
- Add the frozen chopped broccoli and garlic powder, then continue to cook for a further 4 minutes.
- Finally, stir in the milk, American cheese and fresh ground pepper, continuing to stir until all the cheese has fully melted.
