Cheesy Broccoli-Egg Breakfast Casserole
This satisfying breakfast bake combines turkey sausage, fresh broccoli, and a rich blend of cheeses with eggs. It is baked until golden and set, creating a complete meal in one dish. Ideal for a weekend brunch or a make-ahead weekday option, it serves four to six people. Preparation and cooking take around 70 minutes in total.
Ingredients
- 3/4-1 lb turkey sausage (casings removed or use pork sausage)
- 1 small onion, finely chopped
- 1 tablespoon fresh minced garlic (to taste) (optional)
- 3 cups fresh broccoli florets (cooked and well drained)
- 2 cups shredded 3-cheese gourmet cheddar blend cheese, divided
- 8 large eggs, lightly beaten
- 1 cup ricotta cheese
- 1/4 cup half-and-half cream or 1/4 cup milk
- 1 teaspoon black pepper
- salt (I use about 1 teaspoon seasoned salt, but white salt will do fine)
- 1 pinch cayenne (optional or to taste)
- 1 -2 firm plum tomato, thinly sliced
Method
- Preheat the oven to 350 degrees.
- Grease an 11 x 7-inch baking dish with butter.
- Cook the turkey sausage with chopped onion and optional garlic in a skillet until the meat is fully cooked, then drain any fat and place in a large bowl.
- Combine the sausage with the cooked broccoli and 1/2 cup of the three-cheese blend, then transfer this mixture to the buttered dish.
- Whisk the eggs in a bowl, then mix in another 1/2 cup of the shredded cheese, the ricotta, half-and-half cream, salt, pepper, and optional cayenne before pouring over the broccoli layer.
- Top with the remaining 1 cup of cheddar cheese and arrange the thin tomato slices over the surface.
- Bake covered for 30 minutes, then remove the cover and bake for a further 10-15 minutes.
