Cheesy Broccoli and Vegetable Soup

Ingredients

  • 1 (16 ounce) package frozen California mixed vegetables (cauliflower, broccoli, and carrots)
  • 1 (16 ounce) bag frozen broccoli
  • 2 (14.5 ounce) cans chicken broth
  • 0.25 cup butter
  • 0.5 cup all-purpose flour
  • 2 cups milk
  • 1 (1 pound) loaf processed cheese food (such as Velveeta®), cubed

Method

  1. Combine the mixed vegetables and frozen broccoli in a large soup pot. Add the chicken broth and bring the mixture to a boil, then lower the heat and let it simmer for about 20 minutes until the vegetables become tender.
  2. While the vegetables cook, melt the butter in a saucepan. Mix in the flour until smooth and cook it for a few minutes until its colour lightens. Whisk the milk into this mixture and let it simmer for about 10 minutes until it thickens. Add the cubed cheese and stir until it melts, then pour this cheese sauce into the pot with the vegetables. Continue to cook and stir everything together for about 5 minutes more.
