Cheesy Breakfast Sausage and Egg Casserole

Ingredients

  • 2 cups sliced fresh mushrooms
  • 1 small green bell pepper, seeded and finely chopped
  • 1 small jalapeno pepper, seeded and finely chopped (optional)
  • 2 green onions, finely chopped
  • 1/4 cup butter
  • 10 eggs
  • 1/2 cup flour
  • 1 teaspoon baking powder

  • 2 cups cottage cheese
  • 2 cups shredded cheddar cheese
  • 2 cups monterey jack cheese, shredded
  • 1/2-1 lb pork sausage, cooked
  • 8 slices bacon, cooked and crumbled
  • 1/2 cup sliced olive (optional or to taste)
  • grated parmesan cheese (optional)

Method

  1. Preheat your oven to 375 degrees.
  2. Grease a 13 x 9-inch baking dish with butter.
  3. Cook the sliced mushrooms, chopped green pepper, green onions and optional jalapeño in butter until softened.
  4. Whisk the eggs, flour and baking powder together in a large bowl, then incorporate the cooked vegetable mixture. Season with seasoning salt and pepper.
  5. Add all the remaining ingredients and stir thoroughly to combine.
  6. Transfer the mixture into the buttered dish.
  7. Optionally, top the casserole with a sprinkle of grated Parmesan cheese.
  8. Bake without a cover for 15 minutes.
  9. Lower the oven temperature to 325 degrees and continue baking for 35 mins longer, or until a knife inserted into the centre comes out clean.
