Cheesy Breakfast Sausage and Egg Casserole
This satisfying casserole is an ideal choice for a weekend brunch with guests. You can prepare the vegetables, sausage and bacon in advance to streamline the morning process. The combination of eggs, cottage cheese, cheddar and Monterey Jack creates a rich, cheesy base, while the optional jalapeño adds a gentle kick. It bakes up golden and firm, ready to serve a hungry group.
Ingredients
- 2 cups sliced fresh mushrooms
- 1 small green bell pepper, seeded and finely chopped
- 1 small jalapeno pepper, seeded and finely chopped (optional)
- 2 green onions, finely chopped
- 1/4 cup butter
- 10 eggs
- 1/2 cup flour
- 1 teaspoon baking powder

- 2 cups cottage cheese
- 2 cups shredded cheddar cheese
- 2 cups monterey jack cheese, shredded
- 1/2-1 lb pork sausage, cooked
- 8 slices bacon, cooked and crumbled
- 1/2 cup sliced olive (optional or to taste)
- grated parmesan cheese (optional)
Method
- Preheat your oven to 375 degrees.
- Grease a 13 x 9-inch baking dish with butter.
- Cook the sliced mushrooms, chopped green pepper, green onions and optional jalapeño in butter until softened.
- Whisk the eggs, flour and baking powder together in a large bowl, then incorporate the cooked vegetable mixture. Season with seasoning salt and pepper.
- Add all the remaining ingredients and stir thoroughly to combine.
- Transfer the mixture into the buttered dish.
- Optionally, top the casserole with a sprinkle of grated Parmesan cheese.
- Bake without a cover for 15 minutes.
- Lower the oven temperature to 325 degrees and continue baking for 35 mins longer, or until a knife inserted into the centre comes out clean.
