Cheesy Bread Pudding
This satisfying bread pudding offers a simple yet indulgent treat. It combines whole wheat bread with a rich custard of eggs, cream and milk, seasoned with nutmeg and paprika, then topped with shredded Gouda cheese. Baked until golden and set, it's a comforting dish that pairs wonderfully with a fresh salad. The recipe serves two to four people and is ready in about 30 minutes.
Ingredients
- 1 teaspoon butter, soft
- 4 slices whole wheat bread, make sure to use large slices (original says toast, but I used whole spelt soda bread)
- 2 eggs
- 150 ml whipping cream
- 100 ml milk
- 1 pinch nutmeg, freshly grated
- 1 pinch hot paprika
- salt and black pepper
- 100 g gouda cheese, shredded (or cheddar)
Method
- Use the soft butter to grease a 15X15 cm casserole dish.
- Cut the bread slices in half diagonally and arrange them in the prepared dish.
- Whisk the eggs together with the milk and whipping cream in a bowl. Add the freshly grated nutmeg, hot paprika, salt and black pepper for seasoning.
- Gently pour the seasoned egg mixture over the layered bread.
- Sprinkle the shredded Gouda cheese evenly over the top.
- Place the dish in an oven preheated to 200°C/400°F and bake for 20 minutes, or until the pudding is set and has a nicely browned surface.
