Cheesy Bread Machine Bagels
This recipe adapts a classic asiago bagel method for the bread machine, though hand mixing is also an option. Using a cup of shredded pizza cheese gives a subtle flavour that pairs well with both savoury and sweet toppings. The dough is shaped, boiled, and baked until golden. You can adjust the yeast for a lighter texture or add a little water if your dough feels too firm. The result is a batch of 12 homemade bagels the whole family will enjoy warm from the oven.
Ingredients
- 1 1/2 cups warm water
- 1 cup pizza cheese
- 3 tablespoons sugar
- 1 1/2 teaspoons salt
- 4 1/2 cups flour
- 3 1/2 teaspoons bread machine yeast
- 1 egg white
- 4 tablespoons cornmeal
Method
- Place the warm water, pizza cheese, sugar, salt, flour, and bread machine yeast into your bread machine. Allow the cheese to soften in the water briefly before adding the other items. Select the dough cycle on your machine. If a dough setting is unavailable, halt the programme after the second knead.
- Take the risen dough from the machine and separate it into 12 portions of equal size.
- Shape each portion into a smooth ball.
- Press a finger through the centre of each ball and gently stretch to create the classic bagel form.
- Turn your oven on to heat to 375 degrees.
- Cover the shaped bagels with dampened tea towels or paper towels and allow them to proof for 30 more minutes.
- As the bagels rise, bring a large saucepan of water to a boil and stir in 3 tablespoons of sugar.
- Once risen, boil each bagel for 30 seconds per side. Lift them out to drain on dry paper towels, then transfer to baking sheets lightly dusted with cornmeal. Two jellyroll pans work well for this.
- Lightly coat the top of each bagel with the egg white using a pastry brush.
- For a crispy, cheesy topping, you may sprinkle additional shredded cheese over the bagels now.
- Bake the bagels for 20-25 minutes. Rotate the pans halfway through the baking time to ensure they colour evenly.
- Let the bagels cool on a wire rack for 5 minutes before serving.
