Cheesy Beefy Taco Bake
This Mexican inspired one dish meal layers creamy macaroni cheese with savoury taco seasoned beef and a topping of salsa and cheddar. It serves six and is ready in about 50 minutes, making it a convenient and hearty option for a family dinner.
Ingredients
- 1 (14 ounce) package kraft macaroni & cheese dinner mix
- 1/2 cup milk
- 1/2 cup butter or 1/2 cup margarine
- 1 lb ground beef
- 1 (1 1/4 ounce) package taco seasoning mix (taco bell home originals preferred)
- 3/4 cup water
- 3/4 cup sour cream (breakstone "or" knudsen preferred)
- 1 1/2 cups shredded cheddar cheese, divided
- 1 cup salsa (Taco Bell Home Originals thick 'n chunky preferred)
Method
- Set your oven to heat to 400 degrees.
- Cook the macaroni and cheese dinner following the instructions on its box.
- As the pasta cooks, brown the ground beef in a pan, then drain off the fat.
- Mix the taco seasoning and 3/4 cup water into the meat and let it simmer for 5 minutes.
- Blend the sour cream into the cooked macaroni and cheese.
- Place half of the macaroni mixture into an 8-inch square dish. Layer the meat over it, followed by 1 cup of the cheddar cheese, then the rest of the macaroni.
- Cover the dish.
- Bake for 15 minute.
- Remove the cover, spread the salsa over the top and sprinkle with the remaining 1/2 cup of cheese.
- Return to the oven, uncovered, for another 5 minutes or until the cheese has melted.
