Cheesy BBQ Meatloaf
This recipe creates a comforting meatloaf with a surprise melted cheese filling. The mixture of ground beef, crushed crackers, salsa and egg is shaped around shredded cheese, then baked and glazed with barbecue sauce. It yields a satisfying main dish that serves four to six people and requires about 80 minutes to prepare and cook.
Ingredients
- 1 lb ground beef or 1 lb turkey
- 36 saltine crackers, crushed (1 sleeve)
- 1/4 cup of your favorite salsa
- 1 egg
- 1 cup of shredded cheese
- 1/2 cup barbecue sauce
Method
- Combine the ground meat, crushed crackers, salsa and egg in a bowl.
- Divide the combined mixture into two portions, making one slightly larger than the other.
- Shape the larger portion into a loaf form on a baking tray, flattening the top and building a ridge around the perimeter.
- Fill the created hollow with the cup of shredded cheese.
- Use the remaining meat mixture to enclose the cheese, sealing the edges thoroughly to contain the filling.
- Gently press down on the centre of the loaf to flatten it slightly.
- Bake the meatloaf for 50 minutes at 350 degrees.
- Remove the loaf from the oven and pour the barbecue sauce over the top.
- Return it to the oven and continue cooking for a further 10 minutes.
