These sandwiches offer a delicious combination of flavours for a simple lunch. Chicken is pan-cooked with sliced onions, then coated in barbecue sauce and topped with shredded cheddar cheese until melted. The cheesy chicken and onion mixture is served in partially split whole wheat buns. The entire process takes about 40 minutes to prepare four hearty sandwiches.

Cheesy BBQ Chicken Sandwiches

Ingredients

  • 1 onion, thinly sliced, separated into rings
  • 1/4 cup barbecue sauce
  • 3/4 cup 2% milk shredded cheddar cheese
  • 4 whole wheat sandwich buns, partially split (6 inch)

Method

  1. Place the onion rings in a large skillet sprayed with cooking spray. Cover and cook for 2 minutes, then stir and push them to one side of the pan.
  2. Add the chicken to the cleared side of the skillet and cook for 4 minutes.
  3. Turn the chicken pieces over and spoon the barbecue sauce over them. Cover the skillet and cook for 6 minutes or until the chicken reaches 165°F, stirring the onions occasionally.
  4. Sprinkle the shredded cheddar cheese evenly over the cooked chicken. Cover the skillet again and cook for 1 minute or until the cheese has fully melted.
  5. Spoon the cheesy chicken and onion mixture into the partially split whole wheat sandwich buns to serve.
