Cheesy Baked Stuffed Tuna Melts

Ingredients

  • 1 (6 ounce) can chunk light tuna
  • 1/4 cup mayonnaise
  • 1/2 teaspoon lemon juice
  • 1 tablespoon capers, coursely chopped
  • 2 tablespoons green onions, finely chopped
  • 4 tablespoons cream cheese spread
  • 4 slices tomatoes
  • 4 tablespoons gouda cheese (or another mild cheese) or 4 tablespoons monterey jack cheese (or another mild cheese)
  • 4 large kaiser rolls

Method

  1. Heat your oven to 375°F.
  2. Mix the drained tuna with mayonnaise, lemon juice, chopped capers and green onion in a bowl. Set this mixture aside.
  3. Slice a thin layer from the top of each kaiser roll and keep these tops. Hollow out the inside of each roll, leaving a shell roughly 1/2-inch thick.
  4. Apply one tablespoon of cream cheese spread to the base of every hollowed roll. Divide the prepared tuna mixture evenly among the rolls.
  5. Place a tomato slice over the tuna in each bun. Sprinkle one tablespoon of your chosen grated cheese over each tomato slice.
  6. Put the saved roll tops back on each sandwich, pressing down gently. Wrap every bun securely in foil and bake for 20-25 minutes.
