Cheesy Baked Scallops
This rich and creamy baked scallop dish is perfect for a special dinner for two. Scallops are baked in a sauce of white wine and cream, then topped with a flavourful mix of buttery breadcrumbs, garlic, and herbs before being finished with a golden layer of Gruyère and Parmesan cheese. The recipe is straightforward and can be ready in about 40 minutes.
Ingredients
- 12 ounces scallops
- 2 teaspoons chopped garlic
- 2 teaspoons chopped onions
- 1 -2 tablespoon olive oil
- 1 cup heavy cream
- 1/4 teaspoon chopped parsley
- 1/4 cup gruyere or 1/4 cup a mild cheese
- 1/2 cup breadcrumbs
- 1/4 cup parmesan cheese
- 1 cup white wine
- 1/2 cup butter
- season salt and pepper
Method
- Set your oven to heat to 350 degrees.
- Begin by preparing the topping.
- Melt the butter in a small saucepan.
- Cook the garlic, onions, parsley, salt, and pepper on low heat for 4 minutes. Stir in the breadcrumbs until combined, then set this mixture aside.
- Heat the olive oil in a large sauté pan, then cook the onions and garlic for 2 minutes.
- Arrange the scallops in a baking dish. Pour the heavy cream and white wine over them. Scatter the prepared breadcrumb mixture evenly on top.
- Finish by sprinkling the Parmesan and Gruyère cheese over everything. Bake at 350 degrees for 20 to 30 minutes, until the cheese has turned a light golden brown.
