Cheesy Baked Potato Skins

Ingredients

  • 4 large baking potatoes
  • 3 tablespoons vegetable oil
  • 1 tablespoon grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon paprika
  • 0.125 teaspoon ground black pepper
  • 8 slices cooked bacon, crumbled
  • 1.5 cups shredded Cheddar cheese
  • 0.5 cup sour cream
  • 4 medium green onions, diced

Method

  1. Set your oven to 450 degrees F (230 degrees C). Use a fork to prick the potatoes several times, then arrange them on a baking sheet.
  2. Bake the potatoes until a fork pierces them easily, which will take 50 minutes to 1 hour. Allow them to cool for about 10 minutes until you can handle them.
  3. Raise the oven temperature to 475 degrees F (245 degrees C). Prepare a baking sheet by lining it with foil.
  4. Slice each potato in half lengthwise. Use a melon baller to scoop out the inside, leaving a 1/4 inch layer of potato within the skin. Save the scooped potato for another dish.
  5. In a bowl, mix the oil, Parmesan cheese, salt, garlic powder, paprika, and pepper. Coat both sides of each potato skin with this mixture. Arrange them on your lined baking sheet.
  6. Bake the skins for 7 minutes. Turn them over and bake for another 7 minutes until crisp. Take them out, then scatter over the bacon pieces and Cheddar cheese. Return to the oven for about 2 minutes until the cheese has melted. Finish by adding sour cream and green onions on top.
