Cheesy Baked Orange Roughy

Ingredients

  • 1 1/2 lbs orange roughy fillets (If using frozen, then thaw first)
  • 1/4 cup butter, melted
  • 1 cup crumbled cheese crackers (I use Cheese Nips and finely crush them in a big baggie)
  • 1 teaspoon parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red cayenne pepper
  • 1/4 cup lemon juice

Method

  1. Prepare the orange roughy fillets by cutting them into evenly sized pieces. Place them in a dish, cover with water, and stir in the lemon juice. Allow them to marinate for 1 hour. Afterwards, drain the fillets and pat them completely dry using paper towels.
  2. Combine the crushed cheese crackers, parsley, salt, black pepper, and red cayenne pepper in a shallow bowl.
  3. Pour the melted butter into a separate shallow bowl.
  4. Take each fillet and first dip it into the melted butter, ensuring it is coated, then press it into the crumb mixture to cover it evenly.
  5. Line a baking sheet with foil and arrange the coated fillets on it in a single layer.
  6. Place the baking sheet into an oven preheated to 400 degrees. Bake the fish for 20-25 minutes, checking that it is cooked through, which will depend on the thickness of your fillets.
