Cheesy Baked Jalapeño Poppers
These tasty appetisers feature a creamy filling made from sharp Cheddar and cream cheese, stuffed into fresh jalapeño halves. Coated in a crispy corn flake crust, they are baked until golden and bubbly, offering a satisfying alternative to fried versions. Perfect for sharing, this recipe yields 30 individual poppers.
Ingredients
- 1 (8 ounce) package cream cheese, softened
- 1 (8 ounce) package shredded sharp Cheddar cheese
- 0.25 cup mayonnaise
- 15 fresh jalapeno peppers, halved lengthwise and seeded
- 2 eggs, beaten
- 0.5 tablespoon milk
- 1.5 cups crushed corn flake cereal
Method
- Set your oven to 350 degrees F (175 degrees C). Prepare a medium baking sheet by lightly greasing it.
- In a medium bowl, mix the softened cream cheese, shredded Cheddar cheese, and mayonnaise. Fill each halved and seeded jalapeño with this mixture.
- Beat the eggs with the milk in a small bowl. Put the crushed corn flake cereal into another small bowl.
- Take one filled jalapeño half and dip it into the egg mixture, allowing any extra to drip off. Press it into the crushed corn flakes to coat it fully, then arrange it on the greased baking sheet. Continue this process with all the remaining stuffed jalapeños.
- Place the baking sheet in the preheated oven and bake until the cheese filling is bubbly and has a light brown colour, about 30 minutes.
