Ingredients
- 3 tablespoons butter
- 1 onion, thinly sliced
- 1 pound skin-on fresh cod
- 1 tablespoon seasoned salt, or more to taste
- 0.5 cup mayonnaise
- 2.5 tablespoons grated Parmesan cheese
- 2.5 tablespoons shredded provolone cheese
- 2.5 tablespoons shredded mozzarella cheese
- 1 tablespoon chopped fresh parsley
Method
- Set your oven to 400 degrees F (200 degrees C). Put the butter into a 9x13-inch casserole dish.
- Place the dish into the heating oven and leave it until the butter has fully melted, about 5 minutes.
- Arrange the thinly sliced onion across the base of the dish. Lay the cod fillets skin-side down over the onion. Dust the seasoned salt evenly over the fish.
- Combine the mayonnaise, Parmesan cheese, provolone cheese, mozzarella cheese and fresh parsley in a mixing bowl. Spoon this mixture over the cod to cover it.
- Bake the fish in the hot oven until it flakes apart easily when tested with a fork, 20 to 25 minutes.
