This straightforward baked chicken dish is a reliable family favourite. Boneless chicken breasts are first dipped in a blend of milk and mustard, then coated with a mixture of grated cheddar, flour and fresh chives. They are baked until the exterior is crisp and golden and the chicken is thoroughly cooked. It's a versatile main that pairs well with many accompaniments.

Cheesy Baked Chicken Breasts

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tablespoon milk
  • 2 tablespoons of english whole grain mustard (I use whatever brown mustard I have on hand)
  • 1 cup grated cheddar cheese
  • 3 tablespoons all-purpose flour
  • 2 tablespoons fresh chives (chopped)

Method

  1. Combine the milk and mustard in a bowl. In a separate dish, mix together the grated cheese, flour and chopped chives.
  2. Take each chicken breast and dip it into the wet mustard mixture, ensuring it is fully coated. A pastry brush can help with this.
  3. Next, press the chicken into the dry cheese and flour mixture, coating it evenly on all sides.
  4. Transfer the coated chicken to a baking sheet. Sprinkle any remaining cheese mixture over the top.
  5. Bake in an oven preheated to 400 degrees for 30-35 minutes, until the chicken is cooked through and the coating is golden brown.
  6. This chicken complements a wide variety of side dishes perfectly.
