Cheesy Baked Chicken Breasts
This straightforward baked chicken dish is a reliable family favourite. Boneless chicken breasts are first dipped in a blend of milk and mustard, then coated with a mixture of grated cheddar, flour and fresh chives. Ingredients
- 4 boneless skinless chicken breasts
- 1 tablespoon milk
- 2 tablespoons of english whole grain mustard (I use whatever brown mustard I have on hand)
- 1 cup grated cheddar cheese
- 3 tablespoons all-purpose flour
- 2 tablespoons fresh chives (chopped)
Method
- Combine the milk and mustard in a bowl. In a separate dish, mix together the grated cheese, flour and chopped chives.
- Take each chicken breast and dip it into the wet mustard mixture, ensuring it is fully coated. A pastry brush can help with this.
- Next, press the chicken into the dry cheese and flour mixture, coating it evenly on all sides.
- Transfer the coated chicken to a baking sheet. Sprinkle any remaining cheese mixture over the top.
- Bake in an oven preheated to 400 degrees for 30-35 minutes, until the chicken is cooked through and the coating is golden brown.
