Cheesy Baked Cauliflower Gnocchi

This Italian-inspired dinner transforms cauliflower gnocchi into a hearty, vegetable-packed bake. A savoury sauce of tomatoes, kale, onion and garlic is prepared, then combined with the cooked gnocchi and Parmesan. Topped with fresh mozzarella and more cheese, it is baked until golden and bubbling for a satisfying family meal that is full of flavour.

Cheesy Baked Cauliflower Gnocchi

Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, finely chopped
  • 3 cloves garlic, thinly sliced
  • 1 pinch Spice Islands® Crushed Red Pepper
  • 1 teaspoon kosher salt
  • 0.5 teaspoon Spice Islands® Oregano
  • 1 (8 ounce) package curly kale, stemmed and torn into 2-inch pieces
  • 1 (28 ounce) can crushed tomatoes
  • 1 tablespoon balsamic vinegar
  • 2 (10 ounce) packages Green Giant® Cauliflower Gnocchi
  • 4 tablespoons finely grated Parmesan cheese, divided
  • 6 ounces fresh mozzarella, torn into pieces

Method

  1. Set your oven to heat to 450 degrees F.
  2. Warm the oil in a large skillet. Cook the chopped onion until it softens, which should take about 4 minutes. Mix in the garlic, crushed red pepper, salt, and oregano and continue cooking for 2 minutes. Introduce the kale in batches, stirring until it wilts, approximately 2 minutes. Combine the crushed tomatoes and balsamic vinegar. Heat the mixture until it just begins to boil, then take it off the heat.
  3. While the sauce cooks, boil a large pot of well-salted water. Cook the gnocchi in it for about 2 minutes until tender. Drain the gnocchi and mix it into the tomato sauce. Stir in 2 tablespoons of the Parmesan cheese for about 1 minute. Move everything to an 8x8-inch baking dish. Scatter the torn mozzarella and the rest of the Parmesan over the top.
  4. Place the dish in the oven and bake for about 15 minutes, until the cheese turns golden brown and the contents are bubbling.
